General Questions/New to Joomla! 4.x • Joomla inaccessible

Hi,
I will apologise in advance as this is my first post, and - unhappily - I'm posting because my Joomla journey, which is now 10+ years old has come to abrupt halt, and I'm in dire need of some guidance on how to get my website back into action.

I have a couple of sites - one a simple brochure site (with very few annual updates) and another site running Hikashop. For some reason (and my hosting company claim nothing has changed), without me touching the sites, they have both developed a fault, the brochure site - a week ago, the other just a couple of days ago.

Both sites are down with the same error, which is not easy to reflect here, but essentially:

500 error
MySQL server has gone away
mysqli object is not fully initialized

when opening the main site:
in /var/www/web/libraries/vendor/joomla/database/src/Mysqli/MysqliStatement.php (line 137)

or - when trying to access /administator/
in /var/www/web/libraries/vendor/joomla/database/src/Mysqli/MysqliDriver.php (line 429)

I've tried to research the possible causes and do some diagnostics - I've tested the db connection and it seems fine (I can pull data from tables via PHP/MySQLi using the Joomla configuration.php) - but there seems to be something stopping Joomla itself from getting started.

I noticed that the session path is (a) not writeable and (b) has a weird '1;' prefix so I've asked the hosting company if that could be the issue, but they are doing everything they can to make this someone else's problem...

I'm currently focussed on the "brochure" website, in the hope that, once we find the issue, it might(?!) be a similar fix for both sites. To that end I've copied the webroot of that site and created a copy of the database on my own NAS, and I do get a similar error - I'm hoping that provides me with some scope to try out ideas.

If any of the Joomla-guru's could possibly offer some insight into where I might go next, it would be hugely appreciated. I hope I've followed the correct procedure here.

P.S. I should also mention, I've renamed the Joomla 'index.php' to 'index-joomla.php' so that we could place a holding page on the site while we try to find a solution.
P.P.S. The elevated permissions on 'cache' was me trying to resolve the "session path" write issue (by overriding the session_save_path(...)) but that didn't help.
